You will find these little treasures covering the forest floor. There are many species of morels harvested in North America. All species have a honeycomb appearance, but vary in color: some yellow (blond), while others very dark. The darker the color of the morel, the smokier, nuttier, and earthier the flavor will be.

Morels can also vary in size from 1” to 12” high. The season begins in late winter to early spring on the west coast and moves across the nation ending in early summer. Morels are great on their own, sautéed in a little butter, or can be paired with steaks, fiddleheads, asparagus and may other great treats. Morels can be enjoyed fresh, frozen, and dehydrated.
